Don't throw away those peels can be used to create an amazing flavour packed cocktail ingredient.

So what is Oleo-saccharum? Well Oleo means oil and Saccharum means sugar, this is therefore the process of using sugar to extract the essential oils from the peels.

Oleo-saccharum as an ingredient has been used by bartenders since the 19th Century to flavour alcoholic beverages and enhance cocktails.

The process of making it is easy.

Take your peels, ensuring that as much of the white pith is removed as possible (this can be bitter), then muddle (squash) them a little to start releasing their oils.

In a jar add sugar to the peels, white sugar works best, use a ratio of approximately two parts sugar to one part peels.

Shake the ingredients in the jar to mix and set aside in a cool place for a day.

After a day you will be left with a liquid at the bottom of the jar that can be strained and lengthened, should you wish, with water or lemon juice.

The Oleo-saccharum can be kept in a fridge for about a week.
